Three Ingredient Pancakes

What if I told you that you could make GLUTEN FREE PANCAKES that are easier, faster and MORE NUTRITIOUS than the traditional variety?

Yes it’s true, this does exist.

Okay, listen up. All you need are THREE ingredients. Bananas, eggs and oats.

Nutritionally these are awesome pancakes because since they are higher in protein, will keep you fuller longer than the traditional wheat flour pancake. The oats add important fibre to your day and are a whole grain powerhouse of nutrients. Sneaking in some extra fruit in your diet is always an awesome idea.

Gluten free tip: Make sure you choose special “gluten free certified” oats such as Only Oats or Bob’s Red Mill


2 bananas, very ripe, mashed

4 large eggs, beaten

1/2 cup gluten free quick cooking oats or oat flour


Peel and mash bananas in a medium sized mixing bowl until smooth. Add in eggs and beat until well mixed. Add in oats and mix.

Preheat griddle or pan on medium heat, oil the surface. Ladle 1/4 cup of batter for each pancake on the hot surface and cook until bottom is browned. Flip and cook on the other side until done.

Keep warm until ready to serve! Drizzle with maple syrup and serve with fruit.

Makes about one dozen pancakes.
