Three Ingredient No-Bake Cookies, Gluten Free!

Have you ever had your kids ask for cookies for a snack and you don’t have any in the cupboard? Instead of baking a whole batch of cookies you can whip some up in 5 minutes with this super fast three ingredient no bake cookie recipe!

The best thing about these cookies is that they are super nutritious. Whole grain oats, peanut butter and medjool dates are all foods that we should be aiming to add into our diet in the first place. Your kids will love these and so will you!

1 cup gluten free quick oats (like this one)

1 cup pitted medjool dates (find them in the produce section)

1/4 cup peanut butter (more if they aren’t sticky enough)

Optional: chocolate chip garnish


  1. Pit dates and place them in a small food processor. Add oats and peanut butter. Pulse until dates are well blended and dough is starting to stick together.
  2. Using your hands roll a small amount into a ball and flatten slightly to make small “cookies”.
  3. Garnish if you like with a chocolate chip. Store in the fridge.
