In this recipe you take four ingredients and heat them together in a pot. That’s it.
It’s an easy recipe when you are stuck on what to make for supper, chances are you have these ingredients in the pantry already. This Mexican Power Bowl is also very budget friendly, fast, vegetarian and it’s easy for kids to make too. Serve it like a chili with gluten free toast or garlic bread on the side, spoon it over top of hot rice, fold it inside gluten free corn tortillas or put whole grain gluten free tortilla chips on the table and eat it like a hot dip! Makes great leftovers for lunch the next day.
1 can black beans, chickpeas or other beans, rinsed
1 cup corn frozen or canned
1 cup salsa
1/4 cup cream cheese, optional
- In a pot combine black beans, corn, salsa and cream cheese. Heat on low heat for a few minutes until hot and steaming, stirring occasionally.
- Once hot, serve as you would like.
