Honey mustard chicken, make your sauce and let your chicken marinade in it during the day while you are at work. Pop it into the oven when you get home with some potatoes to roast along with them. Steam up some frozen vegetables and you have dinner on the table with minimal prep time.

Honey Mustard Chicken
1 kg of boneless, skinless chicken thighs (about 8-10)
½ cup olive oil
¼ cup Dijon mustard
¼ cup lemon juice
¼ cup honey
½ tsp garlic powder
½ tsp onion powder
Salt and pepper
Line a baking sheet or baking dish with parchment paper.
Whisk together marinade ingredients vigorously until blended. Place chicken thighs on the baking sheet and pour over the marinade. Ensure all chicken is well coated. Cover and refrigerate until ready to bake.
Preheat oven to 425°F. Bake uncovered for 25-30 minutes until cooked to an internal temperature of 165°F or 74°C.
Remove from oven and serve with the delicious sauce. Pairs nicely with roasted potatoes (cook at the same time in the oven) and a hot steamed vegetable.
