Anyone craving cake? How about pumpkin spice cake? Just because you are on a gluten free diet doesn’t mean you can’t have your cake and eat it too!
Here is a super fast mug cake recipe for when craving hit and want a treat in a snap!
Pumpkin Spice Mug Cake
3 tablespoons of all-purpose gluten free flour
2 tablespoons of sugar
¼ teaspoon baking powder
Pinch of salt, optional
2 tablespoons of milk
2 tablespoons of light oil
1 tablespoon of pureed pumpkin
¼ teaspoon cinnamon
In a large mug thoroughly blend together ingredients with a fork.
Microwave on high for 90 seconds. Do not overcook or the cake will be dry.
Let cool for 2 to 3 minutes before eating.
